Shrimp potato salad

This is a shrimp potato salad that my friend Mafi made a few years ago in Austin when she invited us for dinner, and even though she claimed this was a typical salad from Guayaquil, Ecuador, I had never had it before and was impressed by the simplicity and the flavor in it. Who doesn’t love a good potato salad? But add carrots, just barely boiled, and shrimp and you have a great combination. Mafi’s salad didn’t have any garlic but I added it to give a little extra spiciness and because for some reason this week I’ve been adding garlic to almost everything. You can add a lot of things to this salad: olives, celery, eggs, lime juice, etc and it would be great, but at the same time it is just plain perfect the way it is. So, enjoy and gracias Mafi.

Ingredients:

4 cups of boiled and diced potatoes, about 4-5 medium sized potatoes

2 ½ cups cooked shrimp, about 1 lb

2 cups boiled and diced carrots, about 6-7 medium sized carrots

7 tbs mayonnaise

2 tbs finely chopped white onion

2 garlic cloves, crushed

Salt to taste

1-2 tbs finely minced parsley

Optional garnishes: Lettuce leaves and sliced tomatoes

Preparation:

  1. Mix all of the ingredients together.
  2. Sprinkle parsley on top and serve with lettuce and tomato slices.

    I am so excited to have found your webpage. I have been trying to find Ecuadorian recipes online, (I live abroad now) but all the ones I have found until now do not seem like the typical ones…
    I am from Guayaquil and my mom used to make this salad but instead of shrimp she used lobster and of course homemade mayonnaise.
    It´s great that you are posting all these recipes with the pictures, I will try some.

    Love your page. I can’t believe that I found it. I left Ecuador when I was ten years old and my gradmother use to make this salad, but instead of carrots she add it apples- it was just divine. You should try it.
    Thanks for the great work and an inspiration to me and other ecuadorians.
