I actually use the carrot/peas frozen mix sold in the frozen section of the grocery store. I use cilantro not parsley and I also use about 1 tablespoon of basil. I can't believe that I found it. I left Ecuador when I was ten years old and my gradmother use to make this salad, but instead of carrots she add it apples- it was just divine. You should try it.
