Watercress salad with avocado, orange and goat cheese

We eat a lot of salads, at least once a day, if not twice, and with two small kids I have to constantly change it up and come up with new salad creations to keep them from getting bored, this probably applies to everything for them (except certain movies, I have lost count of how many times I’ve seen Cars this week). I really like salads and I probably have my mom to thank for that since she always made a lot of them, and hopefully my kids will continue to like salads as they grow up. I like contrasting flavors in salads, in this one there is spicy watercress, creamy smooth avocado, sweet and tart orange, the richness of the goat cheese and finally the tangy spicy champagne vinaigrette, each ingredient is delicious alone but combining them all in one bite is awesome, with a salad like this all I need is some good bread and good wine and I will be a happy person.

Ingredients:

1 bunch watercress

1 ripe but firm avocado, peeled and sliced

1 orange, peeled and cut in slices

Goat cheese, crumbled

Champagne vinaigrette

1 tbs champagne vinegar

2 tbs olive oil

1 garlic clove, crushed

Salt and pepper to taste

Preparation:

  1. Mix the vinaigrette or salad dressing ingredients together, a good way to get the ingredients well mixed is to place them in a jar, close the lid and shake it up.
  2. Place the watercress, avocado slices, orange slices and goat cheese in a salad bowl, platter, or individual plates.
  3. Pour the dressing over the salad, toss and serve immediately.
