Kiwi mojitos

These refreshing kiwi mojito cocktails are made with ripe kiwis, lime juice, mint leaves, sugar or simple syrup, sparkling water, rum, and ice.

Kiwi mojito

Mojitos, from the classic to the fruity variations, are one of my favorite cocktails for summer. They’re easy to make, refreshing, and can be made with a variety of different fruits. Plus, since my mint crop expands every year I have to make sure I put all that mint to good use. I’ve also decided to rename my mint plants and simply call them mojito plants.

These kiwi mojitos can also be prepared as a mocktail or non-alcoholic drink by omitting the rum. I‘ve found that for parties or summer gatherings, not everyone wants the same amount of alcohol in their cocktail. So I will sometimes prepare a pitcher of mojitos without any rum. Then my guests can add the amount they want (or don’t want for the non-drinkers).

This way I can also offer both white rum and aged rum, which allows people to choose the one they prefer or try a mojito with aged rum (most of the time mojitos are made with white rum) for a different taste. My husband is also not a huge rum fan, and prefers to use vodka for his cocktail, so it’s an overall good way of letting everyone choose the amount or type of alcohol they want in their mojito.

Ingredients

  • 6 to 8 kiwis peeled and cut into halves or quarters
  • Juice from 1-2 limes
  • ~ ½ cup simple syrup or sugar adjust to taste
  • 1 oz to ~1 ½ oz of rum per person adjust to taste
  • 4 kiwis peeled and sliced
  • 4 ounces of mint leaves
  • ~2 cups sparkling water add more to taste – can also use sparkling lemonade (reduce the amount of sugar or simple syrup if using sparkling lemonade)
  • Ice

Garnishes:

  • Kiwi slices and mint leaves
  • Sugar for cocktail glass rims

Instructions

  • Place the peeled kiwi pieces in a blender or small food processor with the simple syrup/sugar and lime juice, pulse until you have coarse puree. If you want an extra minty flavor for the mojitos, then add some mint leaves into the blender.
  • If all the drinks will have alcohol, in a large pitcher, mix the kiwi puree with the rum, you can start by adding a lower amount and then adjust as you taste the final drink.
  • Next add some ice cubes, mint leaves, and kiwi slices to the crushed kiwi and rum mix.
  • Add the sparkling water or sparkling lemonade, stir gently and taste. Add more rum, sparkling water, lime juice, or simple syrup if desired. Top off with additional ice cubes and mint leaves.
  • To make the drinks in individual glasses, follow a similar process as for the pitcher, but add a couple of kiwi slices and mint leaves at the beginning.
  • To make the “add your alcohol to taste variation” follow the same steps without adding the rum, and let each person mix in the amount or type of rum/alcohol they desire.
  • Moisten the rims of the glasses with a slice of lime and garnish the rims with the regular sugar, a cocktail flavored rimming sugar, or cookie sugar sprinkles.
