    Hello Laylita,
    We have been living in Ecuador (north of Ibarra in a small village, the only Americans) for about 4 1/2 years. As you know, we are unable to get the orange sweet potatoes we dearly love in the States. We get the purple variety, camote. They are much different and often are “gooey” when cooked. Do you have any favorite recipes and methods for cooking camote that we might try? Thank you Phil
